Polenta with Mashroom sauce...

I was inspired to create this recipe by 2 factors,

the first - thanks to my Romanian roots! the second due to my daughter who is vegan. Here it is...

The Polenta Recipe:

2 1/2 cups of Polenta (Maize flour)

6 cups of water

1 1/2 table spoons of salt

1/4 cup of olive oil

Oil one English cake pan (or similar baking dish) put aside. Bring water to a boil with added salt. While stirring add the polenta grains and olive oil lower the temperature and keep stirring until the mixture thickens. When the mixture is thick enough pour into the mold. Bake for 45 minutes in an oven preheated to 180 celcius. Let it cool and set before turning it out on the serving dish.

The Mushroom Sauce Recipe:

3 cups of diced button mushrooms

1 diced spanish onion

1 cup of diced portobello mushrooms

1/4 cup of olive oil

1 table spoon of salt

1 tea spoon of freshly ground pepper

1 tea spoon of sweet red paprika

1 tea spoon of curry powder

2 cups of water

1 table spoon of corn flour

Saute the onions until golden, add spices and diced mushrooms, cook fro 5 minutes then mix in water with corn flour. Cook until the mixture thickens, then it's ready to serve.

This is a delicious vegan meal. Salute!!!
