Spagetti... full of chunky earthy veggies

Started making a fab chunky, earthy sauce! from the lost and found vegetable section of the fridge...
The Recipe:
1 large spanish onion
3 garlic cloves
1/4 cup of canola oil
1/4 cup of olive oil
3 large tomatoes
2 chilli peppers
1 red pell pepper (capsicum)
3 celery stalks
1/2 cup of fresh oregano leaves
1/2 cup of flat leaf parsley
1 flat tablespoon of salt
1 flat tabelspoon of sweet paprika
1/2 tablespoon of of curry
1/2 tablespoon of tumeric
4 cups of water
12 black olives
Dice all the vegetables and herbs, set aside. First sauté the onions until transparent then add the garlic, simmer for 5 minutes then combine with the tomatoes and all the dry spices, simmer for 5 more minutes. Add the vegetables and 2 cups of water, bring to a boil then lower the heat to a simmer, let simmer for 10 minutes, add the rest of the water and the fresh herbs. Continue cooking for 5 more minutes. It's a lovely vegan or vegeterian sauce for spagetti!
