Shana Tova - the Jewish New Year

Cooking the traditional compote of Quince. I hope to bring back the fragrance of my mom's and aunties home on the Eve of Rosh Hashana. This is my homage to them, they were the very best of the Jewish Ashkenazi culinary delights.

The Recipe:

4 Pilled and sliced Quince

1 Granny Smith apple

1/4 cup of Sultana raisins

1 cup of sugar

1 sliced lime

1 vanilla pod

2 plums

a dash of salt

2 cinnamon sticks

3 cloves

4 sugared ginger cubes

6 cups of water

Slice all the fruit, and add the spices plus water, bring to boil. Simmer for and hour and half, adjust sweetness according to taste. Cool and chill before serving. Vegan and vegeterian friendly.
