I got this recipe from one of my Lebanese students.
For this you'll need:
1 Cup of flat leaf parsley
1/2 a cup of fresh mint
The juice of one whole lemon
1 Tomatoe or diced cherry tomatoes
1 Small red onion (spanish onion)
1/4 Cup olive oil
Salt & Pepper
1/2 Cup of bulgur
(Bulgur is a cereal food made from the groats of several different wheat species, most often from durum wheat. Burghul is a kind of dried cracked wheat. It is most common in European, Middle Eastern, and Indian cuisine.)
Pour boiling water over the burghul, let cool.
Finely dice all the vegetebels.
Combine with olive oil, lemon juice, salt & pepper.
Chill, then serve.
Vegan friendly, a healthy scrumptiuos salad.
I used lemon rind and fresh mint as a garnish for extra fragrance.
